Watermelon Burst!!
For one cocktail you need the following:
3/4 cup of watermelon chunks, seeds removed
1 shot of rum (as big as you like)
1 lime
3-4 mint sprigs
2 splendas
5-7 ice cubes
To make the world's most refreshing and addictive watermelon cocktail, start by slicing your lime in half. Cut one half into wedges and place them in a cocktail shaker. Squeeze the juice from the other half. Add in the mint and the splendas (or sugar if you prefer and don't care about counting calories). Bruise with a muddler or an ice tea spoon. Shake and set aside. In a blender combine the watermelon chunks, ice, and rum in your blender. Once your are finished, pout the lime mixture into a large glass and top with the watermelon blend. Stir and enjoy!
I promise you will not be disappointed. This drink is super refreshing on a warm summer night. You could even leave out the rum and make a "pregatini" if you can't have alcohol right now. It would still be mouthwatering.
Vals Dreamsicle
Makes 2 drinks.
6 oz vanilla yogurt
1/2 c. orange juice
1/2 c. sprite (or 7 up, club soda, etc.)
1/2 c. pineapple, chopped
3 to 4 oz passion fruit rum or vodka, optional
ice
pineapple slices, for garnish
Combine first four ingredients in the blender or magic bullet. Pulse until smooth. Add alcohol, if desired. Serve over ice right away or refrigerate over ice until chilled and then strain into martini glasses. Garnish with pineapple slices.
Vals Strawberry Ice Tea8 cups (2 quarts) brewed tea of your choice
1 c. honey or 1 t. stevia powder (use less if you like it less sweet)
1 pint strawberries (2 to 3 cups pureed strawberries)
1/2 c. water
extra strawberries or lemon slices for garnish
Make 8 cups iced tea: pour 4 cups boiling water over 4 or 5 tea bags of your choice. (Do not use a glass container; the hot water will cause it to break.) Let stand for 5 minutes. Discard tea bags. Add 4 more cups water. Stir in honey or stevia powder to sweeten. Puree 1 pint of strawberries in your blender or magic bullet with 1/2 cup water. Add pureed strawberries to the tea. Serve over ice or refrigerate to chill. Garnish with whole strawberries or lemon slices.
Variation: raspberries, blackberries
daddy's frozen mojito.
This recipe serves 2 big drinks and you will want to try it with a friend as soon as possible. Yes, it is that good!
4 to 6 sprigs of mint
1 1/2 to 2 c. crushed ice
1 lime, juiced
1 lime, zested
1/2 c. frozen limeaid concentrate
1/2 c. (4 oz) rum
1 c. sprite
extra lime and mint optional for garnish
Place all ingredients into the blender or magic bullet. Blend well. Garnish with mint sprigs or lime slices.
4 to 6 sprigs of mint
1 1/2 to 2 c. crushed ice
1 lime, juiced
1 lime, zested
1/2 c. frozen limeaid concentrate

cucumber citrus water.
After a day at the pool, I can't get enough of this refreshing, tasty water.
8 cups water
2-3 slices cucumber
2- 3 slices citrus of your choice- suggested: lemon, orange or grapefruit
Let cucumber and citrus of your choice sit in water for 2 to 3 hours before drinking. Store in the fridge to chill or pour over ice.
papaya iced tea.
8 cups (2 quarts) brewed tea of your choice
1 c. honey or 1 t. stevia powder (use less if you like it less sweet)
1 c. (8 oz) R.W. Knudsen papaya concentrate
fresh mint for garnish
lemon slices for garnish

margarita punch.
Just in time for Cinco de Mayo, but enjoyable anytime! This punch is a crowd pleaser!
1 can (12 oz) frozen limeaid, thawed
2 cans sprite
2 bottles corona
9 oz Tequila
3 oz Triple Sec
Stir ingredients together with a spoon. Refrigerate until serving. Serve cold or over ice. Garnish with lime slices. If too strong, add water or more sprite. Enjoy!
Vals grapefruit margaritas.
Serves 2.
8 oz frozen grapefruit juice concentrate, thawed
4 oz tequila
2 oz triple sec
3 c. ice
sugar for dusting your rim
Blend together ingredients using food processor (or magic bullet). Blend until smooth. Go around the rim of your margarita glass with a damp paper towel. Dump 1 t. sugar into a plate. Roll the rim in the sugar. Fill glasses with blended margs.
variation- any frozen juice concentrate.
virgin- 1 to 2 t. grapefruit concentrate, add sprite.
sangria.
1 part Wine- red or white
1 part Sprite, club soda or sparkling water
Fruit - grapes, apples, peaches, strawberries, blueberries, etc
Stir together equal amounts wine and sprite. Add fruit of your choice. I like grapes, apples and strawberries in red wine. And peaches and blueberries in white wine.
easy pina coladas.
1 can (14 oz) coconut milk (Check the Asian food aisle)
1 pineapple, cut into cubes
1 c. rum
Ice
In your food processor add first three ingredients, blend. Once smooth add ice one cup at a time until you reach your desired consistency. Pour into fun glasses. Pink straw and little umbrella are not required, but strongly suggested! :)
Variation-
Add bananas or strawberries into the mix
