How can you not love Beans and Weenies? Even the name evokes a smile and memories of lazy summer days, the whiff of juicy steaks on the grill and campfire smoke..
I thought I would try to make my own barbecue sauce since, and well, I am pretty proud of it. This recipe is generalized because I kept adding and tasting so that is what you will have to do as well.. Once you get the taste you love, you can double and triple this recipe because it freezes well!! And not only good with beans and weenies, you can use it for barbecueing chicken, steak, and pork!!
Ok... Lets get started! Lets do the Sauce First.
Ingredients you will need:
Ketchup
Mustard
Vinegar
Liquid Smoke
2 Large Onions (I used yellow) -diced
Brown Sugar
Vegetable or Olive Oil
Salt and pepper to taste
Worcestershire Sauce
In a large saucepan or dutch oven (cast iron works great) pour about a half a cup of vegie or olive oil in and warm
Add the diced onions and sautee until they begin to carmelize (lightly brown and become almost transclucent)
To this mixture add about a cup of ketchup and 1/4 cup mustard
Mix well while keeping on low heat
Stir in 1 and 1/2 cups brown sugar, a dash of liquid smoke and 2 tsp of white vinegar
Stir in 1 tsp of worcestershire sauce
Salt and Pepper to taste
keep stirring over low heat until mixture starts to bubble then reduce heat and simmer for about ten minutes
If you want smooth bbq sauce you can puree this mixture - I left it as is
Now for the Beans and Weenie Part!
6 cups of beans - these can be pinto - great northern - lima - etc. whatever you like best
1 package of Little Smokies - cut into pieces
Continue to cook on low for about an hour to let all of the flavors combine - so delicious!
