Football Season is upon us..
Last year I almost had multiple cardiac arrests during the playoffs and again during the Superbowl.. and here we go again!
GO CARDS!! GO VIKINGS!! (I'm torn between my childhood favorite and my current hometown team)
But in any case, there is no better time to gather your friends, make a bunch of bad for you food, and go crazy!!!
here are some fun football party foods - enjoy!
MMM Chili
For this best chili recipe you are going to need a 4 quart pot. Like most competition chili recipes ingredients will be added in what is called drops. This recipe has 3 drops to it. Most of your best chili recipes use this method so that you get the right amount of flavor at the right time. If you let some of the spices cook to long or not long enough they can be bitter. So to ensure that you get the best chili recipe make sure you drop as directed.
Brown 2 pounds of lean ground beef and drain all the grease off and add to the pot.
Now add one 14.5 ounce can of beef broth and one 8 ounce can of salt free tomato sauce.
Add 1 hot pepper (Serrano, Jalapeno) of your choice to the and bring to a boil. When the boil starts add drop 1.
Drop 1:- 1 Tablespoon of onion powder
- 2 Teaspoons of garlic powder
- 1 Tablespoon of Chili Powder
Cover the pot and reduce heat to simmer for 1 hour. Remove the pepper and crush the juice into the pot. Now its time to add Drop 2 to the pot.
Drop 2:
- 2-1/2 Tablespoons light chili powder
- 2 Teaspoons cumin
- 1/4 Teaspoon black pepper
- 1/4 Teaspoon white pepper
- 1/4 Teaspoon cayenne pepper
- 1/2 cube beef bullion
- 1/2 cube chicken bullion
- 1/2 Teaspoon brown sugar
- 1 pk Sazon Goya
Continue boiling with lid on for 30 minutes. After the 30 minutes add the last drop.
Drop 3:
- 2 Teaspoons Mexene Chili Powder
- 1 Teaspon cumin
- Salt to taste
Cover it up and simmer for 15 minutes more and serve it up. This is the Best Chili Recipe that i have found so far.
Crockpot Chili
So you are lazy and just want to throw everything into the crockpot and let it go.
Here you are - garnish with green onions, chopped onions, cheese, and sour cream.. Throw in some Fritos!!
2 (16) oz cans kidney beans, drained
2 (14) oz cans tomatoes,
cut up 2 lbs ground beef, browned and drained
1 large onion
1 green pepper
1 red pepper
2 tablespoons minced garlic
3 tablespoons chili powder
1 teaspoon black pepper
1 teaspoon cumin
6 oz jar sliced jalapenos (with juice)
2 teaspoons Tabasco
Add all ingredients into a Crock-Pot and set on high for the first hour; then reduce heat to low and continue to cook for 5 hours.Seven Layer Tex-Mex Dip
1 16 oz. jar of Mexican bean dip (can also use refried beans in a can - less expensive and less spicy)
Directions:
Get all your ingredients together. This dip is layered and makes up fast if you have everything out and ready.
Select a dish for serving. You want something fairly good sized, so the dip layers are thin. When you dip a chip, it’s nice to get all the flavors. A Tupperware pie plate dish works well as do many other kinds of containers. I like my burgundy Tupperware pie container, because I can just seal the dip up before and after serving.
Spread the bean dip over the bottom of the serving dish. If you don’t have bean dip, then you can use refried beans. You may want to stir in some taco seasoning or hot sauce (just a little) if you use beans rather than bean dip.
Mix the taco seasoning mix in with the sour cream. Then, spread the cream cheese layer on top of the bean dip layer.
The guacamole dip goes on top of the sour cream. Use a light touch in spreading, so the colors don’t get mixed up and looking pretty gross.
That’s the hardest part.
Now, sprinkle cheese on top of the guacamole.
Sprinkle onions, then tomatoes, and finally black olives on top. Be sure to drain the olives, or the dip will be watery.
Cover the seven layer dip and refrigerate until ready to serve.
Grape Jelly Weenies -great appetizer!
2 - 2 lb pkgs lil smokies
12-14 oz tangy style catsup, smokey or
spicy BBQ sauce, or chili sauce
1/4 c brown sugar
2 tsp Liquid Smoke
2 tbs dried minced onion
1/2-1 cup grape jelly
1 can beer
Mix all ingredients (except smokies) in a crock pot on low. Stir until jelly disolves. Add smokies. Stir to coat smokies, let simmer about 20 minutes, then cover. Heat on low about 1/2 hour, stirring occasionally.
